While more than 80% of Marlborough Sauvignon Blancs are made from the same single clone (UCD1) with contract-grown, often over-cropped fruit, Mount Fishtail sources its own vineyard fruit and processes it with meticulous control over yield, picking timing, and winemaking technique. To dealcoholize, the wine is shipped in bulk to Belgium — home to some of the world's most advanced evaporative distillation facilities — where cool vacuum distillation at just 86°F gently removes the alcohol to a true 0.0% level. Unlike spinning cone technology (which typically only reduces alcohol to 0.3–0.5% and can strip aromatics at higher temperatures), this method preserves the wine's natural character, which is then refined with carefully selected natural flavors and aromas to restore the citrus, tropical, and herbaceous profile that defines great Marlborough SB.
